I am on a long-term mission to eat as many veggies as I can each day. I know that a lot of people struggle to eat their daily quota of veg and I sometimes do too. Whilst lunch and dinner aren’t a problem, unless I’m having a juice or smoothie for breakfast I sometimes struggle to start my day with veg. I don’t always want to have a juice/smoothie for breakfast, especially if it’s a wet, cold and miserable day. To that end, I have been finding other ways to eat veg for breakfast; sweet or savory, there are tons of ways to do it.
Here are some of my favourite picks right now:
'CARROT CAKE' PANCAKES
This works best with the thicker, American style pancakes. Grate a carrot or use carrot juice pulp – add to your standard pancake batter and cook as normal.
SWEET POTATO/BUTTERNUT SQUASH HASH
This is definitely more of a brunch recipe and is so delicious you might eat it for lunch and dinner, too. You can use cooked lentils or beans together with an onion, whatever other veg you fancy and some sweet aromatic spices.
LAST NIGHT'S LEFT OVERS
If you’re in a rush and need breakfast… fast, this is the perfect way to up your veggie intake.
COURGETTE/BEETROOT BREAKFAST MUFFINS
Great for a grab and go breakfast – make a batch of these and eat all week.
SMOOTHIE/JUICE (for when it's not wet/cold)
Use a combination of whatever tickles your fancy…
