Baked Pesto Courgettes

I am known to happily eat a plate of veggies for dinner.  It's easy, quick, delicious and nutritious.  Keep a jar of homemade pesto in the fridge and you'll never be short on flavour.

This can easily be served as a side or a small plate.  If you're in the mood, chuck an egg on top and happily chomp your way though the whole thing!

Ingredients
Makes enough for 1 as a small plate or 2 as a side

3 small or 2 large courgettes
2tbsp green pesto

Method

- Preheat oven to 180C

- Thinly slice the courgettes. 

- Mix in a bowl with the pesto so that all the courgette slices are covered.

- Arrange in an ovenproof dish so that the edges are facing up.

- Bake in the oven for  25-30 minutes.
